Ingredients
•3 C organic whole-wheat all-purpose flour
•1 C canola, grape-seed, olive or coconut oil
•1 tsp cinnamon
•4 ½ – 5 C water
•1 Tbsp organic sugar
•pinch of salt
•1 C chopped Brazil nuts
•honey agave
•sprig of fresh mint (optional)
Pancake Batter Preparation
Place all ingredients, except for the agave, cinnamon, and Brazil nuts into a mixer and blend until creamy.
Cook pancakes individually in a soapstone skillet.
Assemble pancakes into layers with Brazil nuts, agave, and cinnamon.
Note: Brazil nuts contain exceptionally high levels of selenium, an antioxidant-rich mineral found in the soil. Cooking with soapstone is a sustainable way to reduce energy consumption. Its thickness and density retain heat twice as long as conventional metal cookware, thereby reducing cooking time.
